Plavac Mali barrique from Tomić winery is primarily a product of its terroir or the sum of natural influences coming from vineyards on the southern slopes of the island of Hvar (Ivan Dolac, Sv. Nedjelja, Jagodna), where there are top positions for Plavac on sparse, rocky, limestone soil. The natural intensity and varietal aromas of dark and ripe fruit (cherries, plums), Mediterranean herbs and salinity are combined by aging for 12 months in a combination of new and used French barrique barrels. That adds new notes of wood, spices, leather, tobacco. Tomić's Plavac Mali barrique strives to preserve both the classic aromas of Plavac Mali and the style of wine that is less cheesy and robust, and more focused on structure, balance and length of taste.
Red meat, aged meat, full juicy dishes, roasted steak, pašticada (slow-cooked beef prepared in a rich red sweet and sour sauce).
