Plešivica is the best locality for sparkling wines in Croatia. The soil and microclimate are very suitable for wines with high acids, which without difficulty comes out of the second fermentation with solid structures, enviable acids and aromas. Brut sparkling wine, from winemaker Šember, was created by the classic method of fermentation in a bottle and aged for three years on yeast. The colour is already gently golden, and the bubbles are tiny. The white seeded fruit is just as strong as the aromas of brioche. Complexity emphasizes light minerality.
