One of the better DOC Prosecco, Il Fresco is made of 85% Glera while the rest is filled with Chardonnay and PinotG. Whole bunches go for gentle pressing and boil at a controlled temperature, and when they reach the predicted 11% of alcohol and 14g of residual sugar the fermentation is stopped by cooling and the prosecco remains on the yeast for 2 months. The aromas of yellow apples and honeysuckle on the nose, in the mouth is dominated by seeded fruit.
