Kollmitz is a location in Joching, Wachau Valley, known for its slopes cut deep into the loess soil, made without retaining walls. Grüner Veltliner gives excellent results in a mixture of loess and brown slate, and the wines from this area are very elegant, with pronounced spicy notes. The aromatic profile is dominated by ripe apples, quince and delicate spicy notes. Rich texture, well balanced with juicy, lively acidity. An elegant wine with a long and velvety finish, intriguing, a wine that will satisfy discerning palates.
It goes perfectly with Mediterranean cuisine, poultry dishes in aromatic sauces, salads with goat or sheep cheese, carpaccio. It goes excellently with traditional Austrian dishes such as stuffed peppers or perch, and goes well with sushi and sashimi.
